Banana Cream Chia Pudding

Chia seeds are one of the most nutritious foods on the planet: they contain protein, fiber, antioxidants, omega-3 fatty acids, calcium and magnesium - all packed in a cute little shell. I read this interesting quote about them on Dr. Axe's website a while and thought I'd share: 

"Aztec warriors ate chia seeds to give them high energy and endurance.  They said just 1 spoonful of chia could sustain them for 24 hours.  Chia means “strength” in the Mayan language, and they were known as “runners food” because runners and warriors would use them as fuel while running long distances or during battle."

So basically if you eat chia seeds, you can be a total badass. This pudding is great for athletes - it contains the nutritional benefits of chia seeds combined with potassium.

Makes: Approximately 4 servings 

What You'll Need:

  • 1 can of full-fat organic coconut milk 
  • 1/4 cup chia seeds
  • 1 banana + extra (for topping) 
  • 1 Tbsp pure maple syrup
  • Unsweetened shredded coconut (for topping)
  • ½ tsp vanilla

To Make:

Blend coconut milk, 1 banana, 1 Tbsp maple syrup and ½ tsp vanilla in a blender until smooth. Pour into a bowl and stir in 1/4 cup chia seeds. Refrigerate for 2 hours so it can formulate into a gel.

Serve in a small bowl or mason jar and top with sliced banana and 1 tsp unsweetened shredded coconut. Enjoy!
