This is my new favorite sandwich and I've been eating it every day for the past week (sometimes more than one... oops). This is hardly a recipe as it is just a few ingredients thrown into a wrap but I still wanted to share it for it's simplicity and flavor.
I will be adding more raw vegan recipes to holistic as the temperatures rise for summer. I have been doing a lot of research on the power of whole, raw foods and their ability to heal the body, provide more energy and mental clarity. In addition to all of my own personal research, I'm also enrolled in the Culinary Nutrition certification course at Matthew Kenney Culinary institute and I'm excited to share some of that knowledge on this blog over the next few months. Note: There will still be delicious gluten-free cooked recipes as I live by the rule of 'everything in moderation.'
This past March I experimented with a 100% raw vegan diet while I was in the midst of a really big project at work. I know several people who follow a raw vegan diet and every single person has raved about their energy levels, mental clarity, clear skin and more. Me being the skeptic of anything that sounds too good to be true, I decided to try it out for myself in the midst of this huge project. How did I feel...? Incredible. I had more so much energy and was able to focus for 14 hours straight with no mid-day crash. While I do still consume some cooked foods, I have been incorporating a lot more raw dishes into my diet in preparation for summertime as raw foods help to cool down the body. If anyone is interested in raw foods, I'd be happy to provide more blog posts in the coming months with information on the subject.
What You'll Need:
- 1 turmeric coconut wrap (I buy mine on Thrive Market - no affiliation with them, it's simply the best value I have found)
- 2 Tbsp raw sprouted hummus (if you're not preparing these raw you can use a regular hummus if you'd like)
- 3 organic grape tomatoes
- A few long sliced strips of organic cucumber
- 1/4 cup organic alfalfa sprouts
- 1 ounce of your favorite cashew cheese (see below for a list)
For cashew cheese, you have a few options for both raw and not raw:
Not raw: Treeline (Available at Whole Foods), Kite Hill (Available at Whole Foods) and Miyokos (I love the fresh mozzarella) all have amazing cashew cheese spreads.
Raw: Leaf Cuisine (Available at Whole Foods), Nuttin Ordinary (New England), Blode Kuh (Los Angeles area)
Spread the hummus and cashew cheese down the middle of your coconut wrap. Add halved grape tomatoes, strips of cucumber and alfalfa sprouts. Wrap, eat and enjoy!
